Simple Salisbury Steak

INGREDIENTS

Patties:
1 lb. Lean Ground Beef
1/3 C. Bread Crumbs or Ground Pork Rinds*
2 tsp. Ketchup
1 tsp. Mustard
1 tsp. Worcestershire
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder

Gravy:
2 packets Brown Gravy Mix
2 cups hot Water
1 tsp. Ketchup
1/2 tsp. Worcestershire Sauce

Mashed Potatoes (these patties are served over them)*

DIRECTIONS

1. Combine all patty ingredients in a large bowl and massage with your hands until ingredients are incorporated
2. Heat 1 tablespoon olive oil in a large skillet over medium heat.
3. Cook patties on both sides until no longer pink.
4. Lower temperature to low.
5. Whisk together gravy mix and water until well blended.
6. Whisk in ketchup and Worcestershire and pour over patties in skillet.
7. Allow to simmer until gravy warms and thickens.

Fiesta Rolls


INGREDIENTS

1 bag hard rolls (from bakery section of your local grocery store)
1 1/2 lb. ground hamburger, mashed well with a fork
Two 8 oz. cans tomato sauce
1 small can chopped black olives
2 T. red wine vinegar
1 green bell pepper, finely chopped
3/4 lb. cheddar cheese, grated (doesn't have to be measured exactly)
Lawry's Seasoned Salt


DIRECTIONS

Brown mashed ground hamburger. Drain grease.

Turn off heat and add both cans tomato sauce, red wine vinegar, olives, and bell pepper. Mix well. 

Add in cheese and mix until cheese in melted and distributed evenly through the meat mixture.

Cut hard rolls in half (like a hamburger bun). Put buns cut side (open face) on a cookie sheet.

Spread mixture approximately 1/4 inch thick on rolls.

Sprinkle a scant amount of Lawry's Seasoned Salt on top.

Cover loosely with aluminum foil. Bake at 350 degrees for 20-30 minutes.


NOTES

These were brought to me and my family after I had my second baby by a sweet sister from my church. She brought enough so we would have leftovers. They are wonderful as leftovers. I recommend heating them up in the oven vs. the microwave when eating them as leftovers. They get crispy around the edges and are oh so yummy!

Taco Salad


* Ingredients *

2 heads romaine lettuce
1 can dark red kidney beans drained and rinsed
1 lb. ground hamburger
1 pkg. Fritos chips (regular or chili flavored)
1 small tomato (optional)
1 pkg. taco seasoning (approximately 2 T.)
Shredded cheddar or Mexican blend cheese
Chopped black olives (optional)
French salad dressing or Ranch salad dressing

* Directions *

Wash, dry, and chop romaine lettuce. Brown hamburger in skillet, drain grease. Add taco seasoning and approx. 1/4 cup water to hamburger, stir well. Add kidney beans to hamburger and heat through. Chop tomato. Layer lettuce, hamburger/kidney bean mixture, cheese, olives, tomato, Fritos, and salad dressing that order. Enjoy immediately so the hamburger/kidney bean mixture is warm when eaten.

Porcupine Meatballs

 

* Ingredients *
 
1 lb. ground beef
1 egg, slightly beaten
1 tsp. dry onion
1 tsp. salt
1/2 cup white Minute Rice
1 can tomato soup (10 3/4 ounce can)
1 cup boiling water
2 tsp. beef bouillon
1/2 tsp. Worcestershire sauce
 
* Directions *
 
Combine ground beef, egg, dry onion, and Minute Rice. Shape into balls. Place in casserole dish. Mix soup, water, bouillon, and Worcestershire sauce. Pour over meatballs. Cover and bake between 1 and 1 1/2 hours (mine are usually done in the 45 minute to 1 hour range) at 350 degrees. Stir after 1/2 hour very gently to prevent meatballs from sticking together. Serve over rice or noodles.

Italian Meatloaf

* Ingredients *

1 pkg. (6 oz.) Stove Top Stuffing Mix (Chicken)
1 jar  (24 oz.) spaghetti sauce, divided
2 tsp. dried oregano leaves, divided
1-1/2 lb. extra-lean ground beef
2 cups chopped zucchini
3/4 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese

* Directions *

Heat oven to 375°F. Mix stuffing mix with half each of the spaghetti sauce and oregano. Add meat; mix well. Pat into 13x9-inch baking dish. Mix vegetables and remaining spaghetti sauce and oregano. Spoon over meat mixture; cover. Bake 25 min. Top with cheese. Bake, uncovered, 10 min. or until meatloaf is done (160°F).

Company Casserole

* Ingredients *

1 (8 oz.) pkg. penne noodles
2 T butter
1 1/2 lb. ground hamburger
1 tsp. salt
Pepper to taste
1/8 tsp. garlic salt
1 (8 oz.) tomato sauce
1 c. cottage cheese
1 c. sour cream
3/4 c. cheddar cheese shredded

* Directions *

Cook noodles, rinse and set aside. Melt butter and brown hamburger. Add spices and tomato sauce. Combine cottage cheese, sour cream, and noodles. Alternate layers of noodle and meat in a 13" x 9" casserole dish. Top with grated cheese. Bake at 350 degrees for 30 minutes.

Serve with garlic bread as a side.

Sloppy Joes

* Ingredients *

3/4 cup ketchup
1 can tomato soup
1 T sugar
1 T vinegar
1 1/2 tsp. worcestershire sauce
1 1/2 lb. ground hamburger

* Directions *

Brown hamburger, drain. Add all other ingredients and bring to a boil. Simmer 10 minutes. Stir every so often. Serve on hamburger buns.
